Baked Yams

6-7 garnet yams - sliced
in rounds
1/3 cup maple syrup
3 Tablespoons tamari
4 Tablespoons dairy-free
margarine

Place yams in baking dish that
has been oiled (or greased with margarine). Melt margarine and mix with maple syrup and tamari.
Pour over yams and bake at 350° until done,
approximately 45 minutes.

 

Gravy

4 large onions
3 cups chopped mushrooms
8 Tablespoons dairy-free margarine
1/4 - 1/3 cup tamari
2 teaspoons “poultry seasoning”
1/2 cup nutritional yeast flakes
dash black pepper
1/2 teaspoon sage
Soymilk (approximately 1/2 cup)

Sauté onions and mushrooms until soft. Blend with enough soymilk to desired consistency. Transfer to pan and add remaining ingredients. Season to taste. Heat through, stirring well.
